This recipe is one of my faves. It’s so quick and simple to make, tastes delish and makes the perfect mid-morning snack.
50g low-fat greek yoghurt
Lemon juice, to taste
2 tsp fresh dill, chopped
¼ medium carrot, sliced lengthways
¼ medium cucumber, sliced lengthways
½ medium bell pepper, sliced lengthways
How to make:
- For the herb yoghurt: place the yoghurt, lemon juice and dill in a small bowl and mix until well combined.
- Serve with the veggie soldiers.
